Turkey Pumpkin Chili

Turkey Pumpkin Chili

  • 1 tablespoon olive oil
  • 1 1/2 tablespoon minced garlic
  • 1 cup chopped onions
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped yellow bell pepper
  • 1 1/2 pounds ground turkey
  • 2 cans tomatoes
  • 1 can cannellini (white kidney) beans
  • 1 cup pumpkin puree
  • 1 1/2 tablespoon chili powder
  • 1/4 teaspoon cinnamon

Heat oil in large pan. Saute onions, peppers, and garlic until soft. Add turkey and cook until done. Drain pan. Add tomatoes and beans (do not drain cans). Stir in pumpkin, chili powder, and cinnamon. Simmer for 1 to 2 hours. (Recipe can also be prepared in slow cooker.)

    The turkey pumpkin chili above has 1 teaspoon tomatoes for chili but instructions say add tomatoes and beans (do not drain cxans) just is confusioning. I will modify the green bell pepper for 3/4 cup of yellow bell and cut the chili powder to 3/4 tablespoon. I like to taste all ingreadents in a recipe. bt.
