While your article “Celiac Disease: The Great Pretender” [Mar/Apr 2010] was timely and insightful, it failed to mention one cause for the explosion in gluten sensitivity. Many of our crops are genetically modified (GM), and this is the main environmental reason people are getting sick from gluten. GM foods are flooding our markets and fouling up our immune systems.
