Minty Piña Fresca

(Makes about one 16-ounce serving)
Time: 5 minutes (includes prep time)
Equipment: Blender

coconut water, pinapple, lime, and mint smoothie


  • 1 cup coconut water
  • 1 cup fresh or frozen pineapple chunks
  • ¼ cup mint leaves, packed
  • Juice of 1 lime, about 2 tablespoons (28 ml)
  • 4 or 5 ice cubes


  • In Vitamix or other high-speed blender, combine coconut water, pineapple, mint, lime, and ice.
  • Blend for 30 seconds and enjoy.
