Minty Piña Fresca
(Makes about one 16-ounce serving)

Equipment: Blender
Ingredients
- 1 cup coconut water
- 1 cup fresh or frozen pineapple chunks
- ¼ cup mint leaves, packed
- Juice of 1 lime, about 2 tablespoons (28 ml)
- 4 or 5 ice cubes
Directions
- In Vitamix or other high-speed blender, combine coconut water, pineapple, mint, lime, and ice.
- Blend for 30 seconds and enjoy.
